Student-Run Restaurant

Flathead Valley Community College’s capstone culinary course gives second-year students of The Culinary Institute of Montana an opportunity to plan, open and operate their own restaurant on campus. Created by FVCC Executive Chef Howard Karp, the capstone is designed to provide a practical approach to planning, organizing and managing a restaurant.  Students spend the first part of the course developing their initial concept for the restaurant and developing a full business plan. Students then open their restaurant, for a few weeks only, to the public. Students take responsibility for preparation, serving and presentation of the student-developed restaurant to paying guests.
